harvest meat + cheese board

In the Gunn household, my mom has been known to be the queen of snack trays and party platters. Since we were kids, she would make us these elaborate snack trays for our weekly tv show marathons with combinations of gold fish, mac and cheese, mashed potatoes, and basically a everything in child’s wildest dreams. Now that we’re older and all three of us are allergic to wheat and traditional dairy (tragic, I know), we are more keen to snack trays like this one, full of goat cheese gouda and sliced truffle salami.

This is a true harvest platter to serve an army (or at least the majority of my family when the pre-dinner party hunger strikes). Feel free to mix and match cheeses, salamis, or sub-in produce you prefer. This recipe is more of a guideline to help make your appetizer platter dreams come true! Have fun with it, be whimsical, add in dried fruit, flavored olives, or exotic looking apples.

harvest meat + cheese board

makes large serving platter, serves 8-10 people as an appetizer

instructions

Assemble platter by first washing and slicing all fruits and vegetables.

Add crackers in small sections, then begin adding in your larger items first: cheese, salami, carrots.

Continue by adding all elements of the cheese board in a circular motion around the platter finishing in the center with the smallest items such as walnuts, olives, etc.

Serve your Harvest Cheese Board and enjoy!

ingredients

1 box of Bauli Rosemary Crackers

1 salami of your choice (Thin sliced or thicker sliced; I used a tartufo salami cured with truffles)

2 wedges of your preferred cheese (I chose a pumpkin gouda and a goats milk gouda, but choose any cheese you prefer)

1 apple, sliced (I used Pink Pearl apples, but any in-season varieties would work well.)

1 plum, sliced

1 pear, sliced from vertically from stem to bottom

½ cup strawberries, halved

⅓ cup raspberries

2 carrots, peeled

1 cucumber, sliced

1 Heirloom tomato, sliced

½ cup cherry tomatoes, combination of sliced and whole

½ cup dried apricots

⅓ cup cured olives (green or castelvetrano)

¼ cup walnuts

¼ cup dried banana chips
