blackberry honey cashew cheesecake + links!

hi friends, happy wednesday!

we are gearing up for our big move tomorrow, and i'm partially homesick already for nyc. this past year has been the most challenging and rewarding time of our lifes and we have had to say the hardest goodbyes this weekend: to our friends kevin and tori, moira, our waiter Walter at The Mansion, to the lemon man who works at the deli below us, our maintenance men, my team at Plural, the whole shebang.

toasted coconut + lemon cream cake

i ordered the sweet laurel cookbook last weekend and have been dying to break into it all week. i'm truly prepared to take a deep dive into gluten-free and dairy-free baking, that i bought an entire gallon of maple syrup that is currently living on the top shelf of our fridge, and will be there indefinitely (sorry frank!)

hearty root vegetable soup

So this week, I've been on a little bit of a soup kick. As in, I've made so many different types of vegetable soup that I can't even keep track. But I wanted to share the best of the best, so here we are - a hearty, easy, and quick dinner that's healthy and focused on IN SEASON vegetables, which is so important to your health and the quality of the vegetables.

Lately, I've been testing different bouillons as bases for my soups and have loved the bouillons by BOU. You know how traditional bouillon is a thick paste? BOU found a way around that and created a cube that packs all of the flavor without any of the unhealthy additives. It has 30% less salt, no artificial ingredients, it's non-GMO and gluten free (what more could you ask for?).

I would love to know your feedback on different products, and if there are other brands you'd like me to review, please let me know here!

The Art of Living in 400 sq. ft + Not Killing Each Other

Trust me, it sounds way worse than it actual is. My best friend, Rachel, and I both moved in with our boyfriends on the same day this summer after graduating from college. One difference is that we live on different coasts (Portland & NYC) and our apartments are drastically different sizes (700 v 400 square feet). Regardless, usually during our weekly FaceTime we mention the same issues and difficulties.

So of course, we made a list:

Simple Green Smoothie

My go-to 5 minute recipe for the perfect morning smoothie.

Lately I’ve been trying to incorporate more vitamin rich and plant-based breakfasts into my day, so green smoothies have been a staple.

A lot of recipes are complex and involve a lot of prep work, but for me, the mornings are hard enough, I don’t try and complicate them even more.

How I Turned Down My Job Offer + Moved to NYC (without one)

It's not as hard as it sounds. And honestly, it all started when the VP of this company (let's call it Tech Co) backed into my car in a parking lot.

Okay, maybe it started before then, but that was the first time I actually admitted out loud that I had made a big mistake by accepting a "dream job" in Silicon Valley for a global technology company during the fall of my senior year.

Long story short, in February a visitor at UGA backed into my car in the parking lot and during this encounter he asked for my plans after graduation. I randomly admitted that I had a job I honestly didn't want and I felt stuck.
